1 egg
2 teaspoon baking powder
½ cup milk
½ teaspoon salt
¼ vegetable oil
1 cup grated apples
1½ cup flour
½ teaspoon cinnamon
½ cup sugar
Beat egg. Stir in milk, oil, apple, and cinnamon. Mix in remaining ingredients just until flour is moist. Fill greased muffin cups 2/3 full, sprinkle with nut crunch topping, bake at 400° for 20-25 minutes.
Nut Crunch Topping
1/3 cup brown sugar
½ teaspoon cinnamon
¼ cup walnuts
1 tablespoon melted butter
Mix ingredients together.
